These Apple Crisp Oatmeal Muffins are a nice alternative to apple crisp and a tasty single-serve dessert. They’re handy to take to gatherings & not have to worry about spooning the desert out of a pan. #easy

These are great to do with the kids. Not a ton of ingredients, and they can have fun pressing the crust into the muffin pan. Even cleanup is pretty easy, and they need to learn that part too!

I used Honeycrisp apples, and they worked perfectly. But use whatever variety is your favorite! I don’t know that I have ever tried any variety of apples that I didn’t like. But there are some I like better than others. The Opal apples are my favorite!

Amazing Apple Oatmeal Muffins

Equipment

  • 1 Muffin pan – if you don't use the paper or silicone cupcake liners, you should grease the pan.

Ingredients
  

  • 5-6 medium apples peeled, cored, and cut into cubes about 1/4"
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 cup apple pie filling
  • 1 1/4 cups brown sugar
  • 1 tsp cinnamon
  • 1 1/3 tbsp corn starch
  • 1/8 tsp nutmeg
  • 14 tbsp butter it's easier to cut in if you grate it first
  • 5 tbsp water

Instructions
 

Apple Pie Filling

  • 1. Prehet oven to 350℉
  • 2. In a medium pan, melt 2 Tbsp butter, add spices, ¾ cup brown sugar, apples, and 3 tbsp water. Cook over medium heat 4-6 minutes until apples are slightly soft.
  • 3. In a small dish combine cornstarch and 2 tbsp of water. Add to pan while stirring. Continue to cook another 5-6 minuts until apples are tender and filling thickens. Remove from heat and set aside to cool.

Oatmeal Cookie Crust

  • 1. In a large bowl, combine ½ cup brown sugar, flour, and oats. Cut in 12 Tbsp butter with a pastry cutter until it is the consistency of coarse crumbs.
  • 2. Put about 2 heaping Tbsp of the mixture in each cup. Press firmly into the bottom and side to form a "cup." You will have some mixture left over.
  • 3. Now add about 2 Tbsp of the apple pie filling to each cup, until the "crumb cup" is filled.
  • 4. Sprinklt 1 Tbsp of remaining mixture on top of each cup.

Bake

  • 1. Bake in the preheated oven until golden brown. Approximately 15-20 minutes.
  • 2. Allow to cool in the pan 10 minutes.
  • 3. Optional: Drizzle with caramel topping if desired. (But they're delicious without it!)

These are also great to make & have available for snacks after school, or when they come in from playing. You can put them in a big gallon-size ziplock bag to Tupperware & keep them in the fridge. They’ll stay good for days. They probably will be gone long before going bad!
